This delicious power bowl has oil free roasted cauliflower and sweet potatoes, hearty farro, wilted arugula and homemade oil free roasted garlic hummus.

I started by roasting the sweet potatoes and cauliflower. I marinated the sweet potatoes in veggie broth and my favorite spices, including garlic, onion and lots of smoked paprika, plus a little liquid smoke. Then I put them on a baking sheet with a non-stick silicone sheet. No oil needed! Bake at 350 for 45-60 minutes, flipping every 15-20. It’s important to not overcrowd the pan, or they won’t roast, they’ll just get smushy.
The cauliflower doesn’t need to marinate, just cover it in salt, pepper, and whatever spices you like, again I used a lot of garlic, onion and some mixed herbs. Bake on a non stick sheet as well, at 400 for 30 min. They should be perfectly tender.
Cook some farro, water saute some arugula (or have it raw) and make the hummus.
My homemade oil free hummus is one 14 oz can of chickpeas, drained (save the liquid!), rinsed and peeled. Combine in a food processor with 1/2 cup aquafaba (that’s the liquid from the can), plus a tablespoon each of lemon juice and tahini. I like to top mine with smoked paprika and roasted garlic.
