This Chili Lime Sweet Potato, Forbidden Rice & Lupini Bean Power Bowl is way easier to make than you’re thinking, I promise. This 🤤-worthy bowl is a bed of mixed greens, loaded with Lotus Foods forbidden rice, roasted taco sweet potatoes, fire roasted corn, Brami Lupini Beans marinated in hot chili peppers, cilantro, limes, avocado, Trader Joe’s Chili Lime Seasoning, and a cilantro lime tahini dressing.
To make the roasted taco sweet potatoes 🌮🍠: wash, peel & slice a sweet potato, and toss the slices with 1/2 cup veggie broth and 2 tbsp taco seasoning. Roast at 400 for 20 min, flipping halfway.
The dressing is 1 tbsp tahini, about 1/4 cup packed cilantro, 2 tbsp lime juice, 1/2 tbsp Trader Joe’s Chili Lime seasoning. Blend and add water to your liking.
