Peach Pie Flaxseed Overnight Oats

It’s peach season here, and this week at the Farmers Market, we had freestone peaches – which means the flesh of the peach comes easily away from the seed. These are perfect for this peach pie inspired overnight oatmeal recipe – but really any peach would work!

Combine oats, non dairy milk of your choice, cinnamon, vanilla, maple syrup, flaxseed and fresh peaches and let it sit in the fridge overnight, enjoy in the morning with some chopped walnuts!

It’s important to grind your flaxseed because our bodies can’t really break down the seed, if we grind it up we can actually digest it and get the nutrients! Flaxseed helps keep you feeling full, so combined with oats it’s a great way to start the day!

Peach Pie Flaxseed Overnight Oats

Servings: 1

Ingredients:

  • 1/2 cup rolled oats
  • 2/3 cup non dairy milk
  • 1 medium peach, chopped
  • 1/4 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tbsp ground flaxseed
  • 1 tbsp maple syrup

Instructions:

Combine all ingredients in a jar or plastic container, cover, and place in the fridge for at least 4 hours, preferably 6-8. Enjoy in the morning, topped with some chopped walnuts!
